Kobayashi Seika has been handcrafting senbei since 1955, specialising in egg and miso flavours. They continue to make the historic “Tsuji-uranai” fortune cookies, unique to Niigata Prefecture, preserving a tradition that dates back to the late Edo period and influenced the fortune cookie in the United States.

A Playful Snack, Made with Care

Tsuji-uranai senbei dates back to the late Edo period and crossed the ocean in the Meiji era, eventually becoming the fortune cookie known worldwide today. With no other makers left in the region, Kobayashi Seika carries this rare tradition forward, honouring a confectionery culture that nearly disappeared.
