YUKIZURI Sakura

YUKIZURI さくら

This month's star product, "YUKIZURI Sakura" is a spring seasonal creative confectionery product that is made using "Sei-agri" eggs grown in Noto's Satoyama-Satoumi area, a Globally Important Agricultural Heritage System (GIAHS) of Ishikawa Prefecture, as well as Ishikawa rice flour, and domestically produced sakura sake.

Baked by world-renowned patissier Hironobu Tsujiguchi, an Ishikawa-native, this pie-like pastry is inspired by the image of Kenrokuen Garden's iconic Yukitsuri (a Japanese technique for preserving trees and shrubs from heavy snow) and the traditional French pastry "sacristain". A unique texture is achieved by layering the pie with a sablé, and each piece is painted by hand without using a machine. Please enjoy the elegant aroma of cherry blossoms that remind you of the coming of spring.
