NISSIN FOODS is a household name for both Japanese and non-Japanese alike—in fact, not to shamelessly plug but I just had some Fruit Granola for breakfast myself! So needless to say, a collaboration between JAPAN RAIL CAFE and NISSIN was a timely one, and we’re excited to share with you two DIY recipes that you can cook using ingredients found in these NISSIN goodies!
Recipe 1: NISSIN Tom Yam Fried rice

Everyone loves a good plate of fried rice, especially if it comes with a tangy Tom Yam twist, and it’s even better when you find out how easy it is to make it with NISSIN’s Tom Yam Flavoured Cup Noodles!
All you need to do is prepare the following set-up and ingredients and follow these four simple steps and you’re on your way to becoming the next Masterchef (in your kitchen).

You will need:
Ingredients
- 1 x serving of NISSIN Tom Yam Seafood Flavoured Cup Noodles
- 250ml boiling water
- 10ml oil
- 1 x egg
- 200g white rice, cooked
Set-Up
- 1 x Ziploc bag
- 1 x Mixing bowl
- 1 x Stove with frying pan
Estimated cooking time: 10 minutes
Serves: 2 pax
Step 1: First, upon opening a fresh packet of NISSIN Tom Yam Seafood Flavour Cup Noodles, transfer all the dry noodles into your Ziploc bag. Seal the Ziploc bag and crush the dry noodles into small pieces.
Once you’re satisfied with your crushing, pour them back into the cup and add just enough boiling water to cover your noodles. Let it simmer for 2 minutes.
Step 2: Prepare your mixing bowl with white rice. Crack the egg onto the rice and mix well.
Step 3: Prepare your stove and frying pan. Add 10ml of oil into the frying pan and bring to a medium heat. Pour the rice and egg mixture into the pan and stir for 1-2 minutes.
Step 4: Pour the cooked cup noodles into the pan, and fry it evenly with your rice and egg mixture until all of the water has evaporated. Lastly, add the Tom Yam seasoning packet into the mixture and mix well.
Top your rice with some seaweed garnish and voila, your NISSIN Tom Yam Fried Rice is ready to be served!
Recipe 2: U.F.O. Osaka Takoyaki Dondonyaki

If the fried rice is too simple for you, level up by making your very own Dondonyaki. Dondonyaki (どんどん焼き) is a local Yamagata delicacy featuring a Japanese-style pancake that is topped with a delectable sweet sauce. Our version is wrapped with NISSIN’s U.F.O. Osaka Takoyaki ramen noodles for an extra burst of flavour within!

You will need:
Ingredients
- 1 x serving of NISSIN U.F.O. Osaka Takoyaki
- 50ml water
- 10ml oil
- 15g wheat flour
- 5g dashi powder
- Pickled ginger, to taste
- Okonomiyaki sauce, to taste
- Bonito flakes, to taste
Set-Up
- 1 x Mixing bowl
- 1 x Stove with frying pan
Estimated cooking time: 15 minutes
Serves: 2 pax
Step 1: Pour boiling water into a packet of NISSIN U.F.O. Osaka Takoyaki. Simmer for 3 minutes and make use of the packet’s self-draining function to drain out water from your cup without much hassle! Once your cooked noodles are ready, mix the noodles with the seasoning, oil, and lastly seaweed that comes together with the packet. Keep the mayonnaise for later!
Step 2: Prepare your flour batter by mixing hot water, flour, and dashi powder. Stir well until there is a thick and consistent mixture.
Step 3: Prepare your stove and frying pan. Add 10ml of oil onto the frying pan and bring to a medium heat. Pour your batter mixture into the frying pan and form a round shape. Once the bottom half is cooked, flip it over to cook the other side. This is your pancake! Your pancake should be thin, like a crepe, and on the crispier side.
Step 4: Place your pancake on a plate, and transfer a moderate amount of noodles and place them in the middle of your pancake. Add pickled ginger to taste. Wrap the noodles and ginger like a burrito!
Step 5: Top your dondonyaki with okonomiyaki sauce, as well as mayonnaise that comes with it. Lastly, sprinkle your favourite garnish and bonito flakes.
And there you have it—your very own Takoyaki + Okonomiyaki flavoured Dondonyaki!

The cafe’s monthly special NISSIN Special Yakimeshi Set features a generous portion of NISSIN Tom Yam Seafood Fried Rice and U.F.O. Osaka Takoyaki Dondon Yaki, along with Yamagata Dashi Crispy Chicken.
Available only in the month of February 2021, so if you miss it, you’ll just have to try making your own!
